LAst week was a busy week with ball games,birthday parties, finishing unpacking and trying to get ready for summertime and all the busyness that comes with it. Im relying heavy on our crockpot this week.

Monday: Chicken drumsticks roasted in oven(dh will have pork chops),corn on the cob and parmesan noddles.

Tuesday: Green Beans,potatoe and ham in crockpot

Wednesday: Kid Friendly chicken roll ups, mashed potatoes and broccoli

Thursday: Make your own pizza night

Friday: probably take out as youngest son has last t-ball game with trophy party afterwards.

Saturday: GRILL OUT!! We will have hamburgers,hot dogs, mac and cheese and Zesty Home fries

Some things we will have for snacks/breakfasts:

Amish baked oatmeal(this is so great and even better the next day)

Monster cookies (these are great b/c they can be different everytime depending on what you have on hand)

Chocolate chip banana bread

homemade chips and fruit dip

RECIPE SWAP: Crockpot fajitas

This is one of my favorite ways to cook fajitas.Cooking them on the stove,to me, seems to make the meat tougher. PLus I love my crockpot so any excuse to use it is good enough for me.

You will need:

1 pkg beef strips(if you cant find these cut up small steaks into strips) **you can also use chicken
1 pkg fajita seasoning(I use the low sodium kind)
1 tsp adobo seasoning
1 pkg frozen peppers and onion mix(can use fresh but this is cheaper).

Put all together in crockpot.Cook on low 8 hours. I serve this with cilantro and refried beans on tortillas. Add cheese,salsa,sour cream,guacamole, etc. Its also really good with rice.

While I have been creating menu plans for the past year, I have to admit I haven't been very successful in it. Reason #1: my husband. He is VERY picky and has just recently been to the point of driving me nuts. He has a long list of things he doesn't eat and things he will eat. So it makes it difficult. My kids on the other hand are easy to please so that makes my job easier. Now that t-ball season is coming to an end and RA's is over at church, we MIGHT start to slow down this week.

Here is what I have(tentatively) planned:

Monday: Chicken with rice casserole and peas/carrots on the side

Tuesday: Beef stew in the crockpot

Wednesday: Talipia with lemon pepper,corn on the cob and baked potatoes

Thursday: Something easy like tacos or burrito bake since its busy errand running day.

Friday: pork chops,steamed veggies, homemade mashed potatoes

Saturday: BBQ chicken on the grill, mac and cheese and green beans

Sunday: Savory pot roast in the crockpot and buttery bread machine rolls(hopefully these will turn out better than last time).

We are homeschooled so our breakfasts consist of: cereal,oatmeal,bagels/cream cheese and fruit, pancakes or pop tarts. Lunches are almost always: leftovers,sandwiches,ramen noodles(my kids love these), or soups.

Oh the joys of too much to do and not enough time to do it. So I have decided to revamp my cleaning schedule since we are in a new house.I have relied heavily on other blogs' advice and tried www.flylady.net but I'm not sure I can keep motivated. I did however find a cleaning checklist at www.everydaymom.com that I seem to be able to do.It's a household management checklist so maybe I can manage to get it all done. So if there are too many posts in the same day here, someone kick my butt and get me off. Forget Spring cleaning, I need to maintain Year-round cleaning. Wish me luck!

Im Back!!!

After a long overdue break, I am back full force and ready to start posting again. Updates on our family: Shawn is almost over with his first year of homeschool and while it has been fun, its been a challenge.He still wants to be homeschooled for 5th grade so as long as he likes it, we will stick with it. Although there will be some changes for next year. Jake is 4 and is stuck between being a big kid ready to do everything on his own, to still needing help and love from Mommy. He is playing T-ball this year(HOOKS) and I must say so myself, is one of the BEST players on his team. He can hit the ball that the coach pitches him almost to the grass.He gets a little confused about the direction to run but thankfully there are plenty of dads out there to flag him down at the bases. We are attempting to find a preschool for him for next year but if it doesnt work out, we will have a blast at home.
  We are gearing up for a BUSY summer. Between playgroups and VBS and regular fun, we are talking about taking a trip to the ocean(the real one, no more lake for us). We're hoping to spend a few days in Savannah. So thats about it. Cant wait to start getting things ready and in order. Did I mention we moved into a new house? Yep!! Its a big doublewide and I cant tell you how thankful I am to have a bathroom seperate from the boys'. Plus it has a HUGE garden tub and a seperate shower. Life is good.
