We have an extra mouth to feed from now on. Our niece Destiny came to live with us right before Christmas so our food is almost doubling.

This week will be fairly easy and cheap since my car is kaput right now.

Monday: shepards pie and biscuits

Tuesday: breakfast for dinner(pancakes.eggs.bacon)

Wednesday: beef tips with green beans and potatoes

Thursday:chicken pot pie(I use pie crusts and it is so YUMMY)

Friday:Grilled chicken/pork chops, salad, rice with mixed veggies

Saturday: Chili dogs with french fries

Sunday: either white chicken chili or roast in the crockpot with bread machine rolls

I try to serve fresh veggies and fruit on the sides and as always try to bake something healthy.

We opened presents(took less than 5 minutes the way they open them, lol) and then we had breakfast(bacon, sausage, eggs, and chocolate chip muffins) and then to the snow.

Look at how excited everyone is!! They couldnt wait to throw their snowballs at Mommy!!

RECIPE SWAP: Crockpot fajitas

This is one of my favorite ways to cook fajitas.Cooking them on the stove,to me, seems to make the meat tougher. PLus I love my crockpot so any excuse to use it is good enough for me.

You will need:

1 pkg beef strips(if you cant find these cut up small steaks into strips) **you can also use chicken
1 pkg fajita seasoning(I use the low sodium kind)
1 tsp adobo seasoning
1 pkg frozen peppers and onion mix(can use fresh but this is cheaper).

Put all together in crockpot.Cook on low 8 hours. I serve this with cilantro and refried beans on tortillas. Add cheese, salsa, sour cream, guacamole, etc. Its also really good with rice.

ENJOY!!!
